Lemon-Dill Baked Cod Recipe

Ingredients:

  • (4) 6 oz. fresh cod fillets

  • 2 c. potatoes, Russet or fingerling thinly sliced

  • 1 can artichoke hearts

  • 4-6 lemons, sliced

  • 4 T. butter, melted

  • 1 T. paprika

  • 1 T. garlic powder

  • 4 sprigs fresh dill

  • salt and pepper

 

Instructions

  1. Preheat oven to 350 degrees F. Cut 6 sheets of parchment paper (about 8x11) and place on a large baking sheet.

  2. Cut cod into 4 fillets and place on the parchment paper. Sprinkle each fillet with paprika, garlic powder and salt.

  3. Layer lemon slices over each fillet. Add potatoes, artichokes, and dill. Top with butter.

  4. Form four packets by folding the parchment paper securely over the fish content. Place all four packets onto a large baking sheet.

  5. Bake for 35-40 minutes, or until cod and potatoes are cooked through.
