Pecan Crusted Salmon Recipe

Instructions:
4 (6 oz.) salmon filets
1 T. honey
1 T. Dijon mustard
1 T. butter, melted
1/4 tsp. salt
1/3 c. Panko breadcrumbs
1/2 c. pecans, finely chopped
1 T. parsley
Maple Glaze (Optional)
1/3 c. bourbon
¼ c. soy sauce
2 T. brown sugar
1 T. honey
1 T. Dijon mustard
1T. lemon juice
Let's Get Started!
Preheat oven to 450 degrees and line a baking sheet with parchment paper, then spray with cooking spray.
Pat the salmon filets dry with a paper towel and place skin side down on the baking sheet.
Combine honey, mustard, butter, salt, and pepper in a small bowl.
Brush mustard mixture over the salmon.
In a small bowl, combine panko breadcrumbs, pecans and parsley.
Sprinkle pecan mixture over top of salmon.
Bake salmon for 10-12 minutes depending on the thickness.
For the Maple Glaze: Bring all maple glaze ingredients to a simmer over medium heat and cook for 5-7 minutes until slightly thickened. Remove from heat.
