Sweet Corn Bread Recipe
Prep: 15 mins | Cook Time: 20 mins | Serves: 12
Ingredients:
1 c. yellow cornmeal
1 c. all-purpose flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/4 c. buttermilk, room temperature
1 large egg
1/3 c. vegetable oil
honey butter, store bought
Let's Get Started!
1. Preheat oven to 400 F. Grease an 8 x 8 glass casserole dish or a lined muffin pan and set aside.
2. In a large bowl whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt, set aside.
3. In a large bowl, mix remaining ingredients until well combined. Stir the wet ingredients into the dry ingredients until combined. Do not over mix, a few lumps are ok.
4. Spoon batter into the prepared muffin pan (about ¾ way up). Bake for 15-20 minutes, or until a toothpick comes out clean. Remove from oven and spread with honey butter.
*Note: Cooking time will be longer (25-30 mins) if using am 8x8 dish.
