Ingredients:
2 c. old fashion oats
1 c. shredded sweetened coconut
1/2 c. walnuts
1/2 c. pecans
2 T. brown sugar
1 tsp. cinnamon
1/2 tsp. salt
1/4 c. butter, melted
1/2 c. maple syrup
1-1/2 tsp vanilla extract, (or cake batter extract)
1/3 c. dried cranberries
Let's Get Started!
Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper. Set aside
In a large bowl, combine oats, coconut, walnuts, pecans, brown sugar, cinnamon and salt.3. In a small saucepan, melt the butter until golden brown. Remove from the heat and add the maple syrup and vanilla extract.
Stir until well combined then pour into the oatmeal mixture and mix until well combined.
Spread the granola mixture on the baking sheet in an even layer. Bake for 30-35 minutes until granola is golden brown.
Remove from the oven and stir in the dried cranberries.
* Let the granola cool completely.
