Garlic Mashed Potatoes Recipe

Ingredients:
1 garlic head, roasted
1 tsp. extra virgin olive oil
4 quarts water
2 lbs. russet potatoes, peeled, diced and rinsed in cold water
1/3 c. butter, room temperature
1 c. half and half, warm
1/2 tsp. garlic powder
salt and pepper, to taste

*Preheat oven to 400 degrees.
Roast the Garlic:
Use a sharp knife and remove the top of the garlic head. Place the garlic in foil and drizzle with olive oil then wrap it up.
Place the garlic on a baking sheet and bake for 50-60 minutes until garlic is tender
Boil then Potatoes:
In a very large pot, add water and salt then bring to a boil. When water is boiling, add potatoes and cook for 20 minutes or until potatoes are completely fork tender. Drain potatoes then rinse potatoes in warm water to remove the starch.
Using a medium pot, over a medium heat, add in half and half, and butter. After butter has melted, mash garlic in the liquid. Add the garlic butter liquid to potatoes in small increments (do not pour all the liquid at once), mixing and mashing until the potatoes reach your preferred consistency.
Season with garlic powder, salt and pepper, then serve.
