Ingredients:
Apple Filling
4 T. butter
2 apples, diced
3 T. apple juice
1/4 c. granulated sugar
1/4 T. kosher salt
Custard
2 large eggs
1 egg yolk
1/3 c light brown sugar
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 T. vanilla extract
4 T. butter, melted
1 3/4 c. evaporated milk
4 large apple fritters, torn into pieces

Let's Get Started!
Preheat oven to 350 degrees
Apple Filling:
In a medium saucepan, melt butter then add in the apples, apple juice, sugar and salt. Cook the apples over a medium heat until soft and the liquid is slightly thickened, about 15 mins. Then set aside
Custard:
Spray a small casserole dish with cooking spray. In a medium bowl, whisk eggs, egg yolk, brown sugar, salt, nutmeg, cinnamon, vanilla extract. Then gently whisk in butter and evaporated milk.
Fill prepared casserole dish with half of the fritter pieces. Evenly spread the apple mixture over the fritters then top with remaining fritter pieces.
Pour the custard mixture on top of the fritters. Gently press on the fritters with a spatula to help them soak up the custard. *Then let it sit for 20 minutes.
Cover casserole dish with foil and bake in oven for 30 minutes. Remove foil and bake for an additional 15 minutes until pudding is brown and middle is a little jiggly.
Remove bread pudding from the oven and let it sit for 5 minutes. Drizzle with caramel sauce and enjoy!
