Ingredients:
2 T. minced onions
6 T. milk
1 1/2 c. corn meal
8 T. All-purpose flour
1 tsp. salt
1 tsp. baking powder
1 egg
1 1/2 T. sugar
1 tsp. Creole seasoning
2 T. dried parsley
canola oil, for frying
Let's Get Started!
In a medium bowl, whisk cornmeal, flour, salt, baking powder creole seasoning, sugar and parsley.
Add in egg, milk and onions, whisk to combine. Then let the batter rest for about 10 minutes.
Heat oil in a heavy bottom pot over a medium heat.
Work in batches and scoop 1 tablespoon of batter with one spoon and gently push it into the oil with another tablespoon. Turn each hush puppy over to cook on all sides. Fry for about 4 minutes until cooked through and golden brown.
Remove from the oil and drain on a paper towel lined plate. Serve warm
