Ingredients
For the Cake
1 c. all- purpose flour
1 c. sugar
1/4 tsp. salt
1 tsp. baking powder
2 tsp. vanilla extract
3 eggs
1/4 c. pineapple juice
Pineapples and Cherries
1/2 c. butter
3/4 c. brown sugar
7 pineapple rings, fresh or can
maraschino cherries, for design
Let's Get Started!
Preheat oven to 350 degrees. Spray a 9-inch round cake pan with cooking spray. Cake: In a large bowl, whisk flour, sugar, salt, baking powder, vanilla extract, eggs and pineapple juice until well mixed, then set aside.
Melt butter in a medium saucepan over a medium heat. Then whisk in brown sugar and cook for 3-4 minute until mixture become creamy and bubbly.
Pour butter/sugar mixture into the bottom of the cake pan. Then arrange the pineapples in the butter/sugar mixture and place a cherry inside of each ring.
Pour cake batter on top of the pineapples using a spatula to evenly spread the batter to the edges
Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
Allow cake to cool for 10 minutes, then invert/flip onto a serving plate.
