Eat Your Veggies Broccoli Soup Recipe
Serves: 4 | Prep Time: 10 mins | Cook Time: 20 mins
Ingredients:
2 T. butter
1 medium onion, chopped
1 rib of celery, chopped
1 clove of garlic
4 c. chicken stock
4 c. broccoli florets
2 carrots, chopped
Salt and pepper
Cheddar cheese, shredded (optional for topping)
Let's Get Started!
Step 1: In a large pot, melt butter over medium heat. Sauté onions, garlic, and celery until the onions are soft, about 3 minutes.
Step 2: Add the chicken stock, bring to simmer.
Step 3: Add the broccoli and carrots stir to combine.
Step 4: Turn heat down to low, cover, and simmer for 15 minutes until the broccoli is soft.
Step 5: Transfer the soup into a blender or food processor and puree until creamy.
Step 6: Transfer pureed soup back to the large pot and continue to cook on low for 2-3 minutes. Add salt and pepper to taste.
Step 7: Serve hot with shredded cheese on top.
